Chef Vedam Clementi is a Gluten Free Certified Personal Chef and the author of Vedam’s Gluten Free & Fabulous! Recipes From A Southern Gay Househusband.

 After suffering for over two decades with digestive issues, Chef Vedam was diagnosed with Non-Celiac Gluten Sensitivity, and had to learn to cook a new way, completely gluten free. Being the main cook in the house, Chef Vedam soon realized that he was not going to cook two different meals, a traditional meal for his family and a gluten free meal for himself. He knew that he would have to make his gluten free food not only nutritious but also delicious; something that everyone would enjoy. Staying true to his Southern heritage, Chef Vedam knew that he would have to take his favorite down home comfort foods and convert his recipes to match his dietary needs. As he began to share his recipes, he soon realized that many people are in the same boat as he, and need his help. He began to compile his recipes into one concise resource, and Vedam’s Gluten Free & Fabulous! Recipes From A Southern Gay Househusband became a reality. The cookbook not only covers Southern dishes gluten free style, but also includes gluten free basics, how to create your own flour blend, how to set up a gluten free kitchen and home, breakfasts, soups, side and main dishes, desserts and some of his and his husband’s favorite dishes and cuisines.

After the release of his cookbook, Chef Vedam realized that many people needed and loved gluten free food but were not interested in cooking for themselves. This led Chef Vedam to become a Gluten Free Certified Personal Chef, through the USPCA (United States Personal Chef Association), and his delicious dishes have been enjoyed by many. As a personal chef, Chef Vedam serves North Georgia, Atlanta, Asheville, NC, Chattanooga, TN and the adjoining areas. Chef Vedam also teaches gluten free cooking classes and provides demonstrations in and around Atlanta, Asheville, and South Georgia all the way to Savannah. This spring, Chef Vedam plans to take his book tour and cooking classes even further south to Florida and then begin going north up to his home state of Virginia spreading the word and knowledge about delicious and nutritious gluten free food and recipes.

Chef Vedam lives in the North Georgia Mountains with his husband Nirish and his elderly mother in law. Years later after his own diagnosis, his mother in law also tested positive for a wheat allergy and Nirish feels better not being exposed to wheat, so together, they live happily eating a gluten free and fabulous diet!

My baby girl, (now 15) has had stomach issues since kindergarten. It has limited her from several sports that are her passion. A few weeks ago, she randomly wanted to try cutting out gluten in her diet. So, I supported her 100% and headed for the grocery store. After 2 days of being gluten free, she felt a drastic change with her stomach issues. Knowing this must be her enemy, I went straight to Mr. Perfects (Vedam, of course) site and read every article he had on there. He has a true passion for cooking. Everything is from scratch, fresh and healthy. I was blessed with having a meal prepared by him once, (we live far away from each other) and it was the best meal I think I’ve ever had. If the option were available I would give his cooking skills 10 stars. My daughter is healed because we have our very own Angel on our side. He has also performed a miracle for Isabella. Vedam’s food tastes exceptional and is truly delicious. And it doesn’t just taste super yummy but looks beautiful as well. His gluten free quiche with a scrumptious crust is a must-try!  And his watermelon salad!! ☆ ☆ ☆ ☆ ☆

I went to a party last night. This man was the chef. The food was amazing!!! I especially liked the wings. They had a crisp texture to them and were in this wonderful sauce. My mouth did a dance. There was a fabulous salad with a combination of veggies and fruit, barbequed shrimp, and several different kinds of quiche. I am not a gluten free person yet, but this food can change my mind. Kudos to the chef. ☆ ☆ ☆ ☆ ☆

Chef Vedam’s food is the best! So far, my favorites are the margherita pizza and the spicy shrimp and basil rolls. I also love his peanut dipping sauce. I use it as salad dressing. His recipes are very easy to follow. You won’t be disappointed. ☆ ☆ ☆ ☆ ☆

I tried the fried chicken last night. YUMMMM! Super yum! I paired it with loaded cauliflower casserole. It felt decadent and warm. I couldn’t tell it was gluten free, just that it was good! Thank you Chef Vedam!!! ☆ ☆ ☆ ☆ ☆

I love the recipes and every one that I’ve had the pleasure to actually eat has been scrumptious! I recently had the veggie burgers which were delish! The Pumpkin Roll is outstanding! It’s not heavy or overly sweet. It’s satisfying to the sweet tooth – without that sluggish feeling you get from too much sugar. No bloated tummy – every bite is yummilicious! ☆ ☆ ☆ ☆ ☆

I have had my fair share of gluten free cooking since being diagnosed with celiac disease 8 years ago. Chef Vedam makes the BEST food I have tasted. The bread is unreal! It is almost unheard of in the market to find bread with the same flakiness and moisture as “real” bread but his meets the demand!! I have had two catered meals by him as well and each one did not disappoint. Special care in the kitchen was used to make sure all ingredients were fresh and gluten free! I knew after having the meals I just had to purchase my own cook book. Though my skills are no where near his, the recipes I have created are so wonderful! Plus, definitely saves money to make these foods from scratch instead of buying at chain grocery stores – and now I know how! Thank you Chef Vedam!!! ☆ ☆ ☆ ☆ ☆

I want to share few words about the foods that I have personally tasted from the hands of Chef Vedam.
I have had his Portobello Mushroom parmigiana and it was succulent, rich in favors and a wonderful dish for some of us who like to stay away from meat. ( like me). I devoured that dish!
Another one of my favorites is his home made veggie burgers. As we say here in Italy MAMAMIA! I have had many veggie burgers over the years and these are hands down and by far the BEST I have ever had. For those who like burgers and do not want to eat the traditional meat type or if you are a vegetarian make this recipe. I could not get enough of these! I also enjoyed his Chicken, onion with mushroom gravy over Quinoa dish. I tried the Veggie Lasagna and adored that. His crab cakes are to die for and I devoured them as we do not have crab in Italy, so that is always one of my first requests on my list when I come to visit Vedam and Nirish.
He also made these Shrimp and Basil spring rolls that were wonderful. He made his own peanut sauce teriyaki sauce to go with that and I swear, you could not get any thing better than this in a 5 star restaurant!
And last but for sure not least, Cheddar Cheese Biscuits. RUN, do not walk but RUN to his book, turn to page 33 and make those for your family. Hard to believe they are gluten free. Scrumptious!
I am extremely proud of my brother who I have seen before my eyes, take his own health issue, gluten intolerance, his love for cooking, his imagination, patience and intelligence and turn what for some could have been a lemon and made lemonade!
And now he has written a book, is doing cooking classes and demonstrations. And lovingly sharing with others his talents and how life can go on and be delicious even without gluten!

My wife is attending some of Chef Vedam’s cooking classes and I am extremely pleased with the recipes she has tried from his cookbook. The food is very tasty and very pleasing to the palate! It has certainly made mealtime in our home a pleasure again!’ No more cooking separate meals for for each of us.

If you are in need of a personal chef to prepare your food do not look any further!
I promise you will be thrilled with Vedam Clementi’s abilities and services. The fact that Vedam’s food is all gluten free is simply amazing, it is so delicious.
Chef Vedam catered our first, holiday open house at our new home in north Georgia. He worked closely with me in planning our menu (for about 30-35 guests) and carried out the planning to perfection, hassle free. Chef and his assistant arrived on the morning of the event, finished preparation of the food, and arranged the presentation in a professional and visually beautiful manner. And the food was simply extraordinary and all gluten free! We had amazing dishes like Mini Crab Cakes with Cajun Basil Remoulade, Strawberries with Sweetened Cream Cheese and Balsamic Glaze, Cucumber Slices with Herbed Cream Cheese and Shrimp, Mini Cheese Cakes with Raspberry Chambered Sauce, and the Mini Cheddar Cheese Gluten Free Ham Biscuits! the service was perfect and non-disruptive and our guests were extremely complimentary and impressed-several requested more information about our chef and our party was a hit, thanks to him.
Afterwards, the cleanup was both efficient and thorough. He even bagged leftovers for me and told me how to serve again! If anything, our kitchen and dining area was as clean or cleaner then before the event! My husband and I would not hesitate to recommend Chef Vedam for any event, large or small. It’s true, Chef Vedam is fabulous!  ☆ ☆ ☆ ☆ ☆
